I am eighteen. 5' 10". 260 lbs. This blog is my way of keeping track of progress, having inspiration, and maybe inspiring others. The reason I am losing weight is not that I don't think I'm, beautiful, but because I wish to have a healthier life style. This blog will contain other peoples stories, pictures, quotes, healthy food, and even fashion. Anything that Inspires me.
The Facts:

I will be starting my lifestyle change on January 6th, 2012.
I plan to lose 80 pounds by January 6th, 2013.

What I have going for me:

  • I don’t like chocolate.
  • I love veggies.
  • Sushi is one of my favorite foods ever.

What I don’t have going for me:

  • I eat way to much junk.
  • I lovvveeeee my carbs.
  • I hate viniger.
  • I need to stop being lazy.

Now truthfully, I am not going to wake up January 6th a health nut. This is going to be really hard for me to do. I’ve tried and failed at least five different times, but I really do feel more determined this time.

Just because I am deciding to become healthier, that doesn’t mean that I am going to change my eating habbits 180 degrees right off the bat. In my opinion, this does not work. I will definitely be cutting out callories, large porportions, and fat… but that doesn’t mean I’m not going to go out to resturants and not have the lobster/steak combo.

I believe that you can cheat every once in a while, as long as you moderate exatcly how you are cheating on your diet. One of the reasons I am starting this blog is so that when I do feel like breaking the diet off completely, I will hopefully come here and be inspired.

Now…Every two weeks starting from January 6th I will be weighing in. I hope to lose around 3-5 pounds bi-weekly, or at least 10 pounds a month. So if you are reading this, welcome to my journey. Feel free to ask as many questions as you want. I will be here to help out as many people as I can, all the while you all help me.

For a cold and windy day, you need some warming comfort food. This Creamy Tomato Basil soup with Focaccia Grilled Cheese sandwich should do the trick!

Edamame with Star Anise, Red Pepper Flake and Toasted Sesame Oil (inspired by Three Muses)2 cups Edamame 1 Tbsp Star Anise Seeds 2 Tbsp Toasted Sesame Oil1 Tsp Red Pepper FlakeSea SaltRoasted Black Sesame Seeds (optional)
Boil edamame according to the package (typically boil 3 minutes in salted water).  Remove from heat and drain in a colander.  In a saute pan, toss edamame with star anise, sesame oil and red pepper flake.  Warm over low/medium heat until fragrant.  Remove from heat and sprinkle with sea salt to taste.  Garnish with roasted black sesame seeds.  Serve immediately.  
While I was in New Orleans, Chris, Sabrina and I stopped into Three Muses for some jazz, a drink and a few snacks, including their edamame.  It was such a simple but flavorful combination that I knew I needed to recreate it at home.  Three Muses ended up as one of the stand out restaurants of my trip.  A little unassuming, but absolutely delightful.

Smokey Deviled Egg
6 hard-boiled eggs (boil with a splash of vinegar and some salt.  Remove shells, cut in half length-wise).1/4 cup Mayonnaise4 Tbsp dijon mustard1-2 splashes liquid Hickory Smoke Smoked Paprika
Spoon egg yolks into a small bowl and mash well with a fork. Add mayo and Dijon (you can add more or less depending on the flavor you like) and continue to mash/mix.  Mix in liquid smoke.  Spoon or pipe into egg white halves and sprinkle with smoked paprika.  Serve immediately or cover and serve next day.
